Black out some categories while pseudonymizing others in one apply pass.

In Fast Track, each category has a Redact / Pseudonymize control. Redact permanently blacks out content; Pseudonymize writes a consistent token such as Person 1.

Preferences can be stored at organization level. Mixed modes are applied in a single pass by the PDF engine.
